Boursin Chicken Pasta

A creamy and flavorful pasta dish featuring tender chicken and vibrant vegetables, perfect for quick weeknight dinners.

Ingredients

  • 2 cups pasta (fusilli or penne)
  • 1 pound chicken breast, diced
  • 1 package (5.2 oz) Boursin cheese
  • 1 tablespoon olive oil
  • 1 cup chicken broth
  • 1 cup cherry tomatoes, halved
  • 2 cups spinach
  • Salt and pepper to taste
  • Grated parmesan cheese for serving

Instructions

  1. Boil water in a large pot, add a pinch of salt, and cook the pasta according to package instructions. Drain and set aside.
  2. Heat olive oil over medium heat in a large skillet. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Stir in the cherry tomatoes and spinach. Cook until the spinach wilts, around 2-3 minutes.
  4. Pour in the chicken broth and add the Boursin cheese. Stir until the cheese melts and you achieve a creamy sauce.
  5. Add the cooked pasta to the skillet, tossing to coat well in the creamy sauce. Season with salt and pepper.
  6. Serve hot with grated parmesan cheese on top.

Notes

Fusilli or penne works well because their shapes hold the sauce beautifully. Experiment with different varieties of Boursin cheese for varied flavors. Fresh spinach wilts quickly, but you can substitute kale or another leafy green for more texture.
