Creamy Chicken and Rice Soup

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, diced
  • 1 cup rice
  • 4 cups chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Optional: herbs like thyme or parsley

Instructions

  1. Sauté the diced onions, carrots, and celery in a large pot with a little oil over medium heat until softened, about 5 to 7 minutes.
  2. Stir in the shredded chicken and rice, mixing well to combine all the ingredients.
  3. Pour in the chicken broth and bring the mixture to a boil.
  4. Reduce the heat to low and let it simmer until the rice is fully cooked, about 15 to 20 minutes.
  5. Stir in the heavy cream and season with salt and pepper to taste; cook for an additional 5 minutes.
  6. Ladle the soup into bowls and garnish with fresh herbs if desired before serving.
