A comforting and flavorful dish combining tender chicken, vibrant bell peppers, and creamy cheese, perfect for the whole family.

Ingredients

  • 8 oz fettuccine or your choice of pasta
  • 1 lb chicken breast, diced
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 packet fajita seasoning
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

Instructions

  1. Boil water in a large pot and cook the fettuccine according to the package instructions until al dente. Drain and set aside.
  2. Heat the olive oil in a large skillet over medium heat. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Add the sliced onions and bell peppers to the skillet. Sauté until tender and slightly caramelized, about 3-5 minutes.
  4. Stir in the minced garlic and fajita seasoning, cooking for an additional minute.
  5. Pour in the heavy cream and bring to a gentle simmer. Stir in the shredded cheese until fully melted and creamy.
  6. Toss the cooked pasta with the chicken and sauce mixture, seasoning with salt and pepper to taste.
  7. Serve hot, garnished with chopped cilantro if desired.
