Ingredients

  • 4 tablespoons butter
  • 2 tablespoons olive oil
  • 1 cup chopped celery (about 2-3 stalks)
  • 1 tablespoon minced garlic (3-4 cloves)
  • 1 cup shredded carrots (about 2 medium carrots)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 teaspoons onion powder
  • 1 tablespoon Italian seasoning
  • 1/4 cup flour
  • 3 cups chicken broth
  • 3 cups milk
  • 1.5 cups heavy cream
  • 2 cups cooked shredded chicken
  • 8 ounces chopped frozen spinach
  • 16 ounces gnocchi

Instructions

  1. Sauté the butter and olive oil over medium heat. Add the celery, garlic, and carrots. Sauté until softened, about 3-5 minutes.
  2. Stir in the salt, black pepper, onion powder, and Italian seasoning. Cook for an additional minute.
  3. Sprinkle in the flour and stir to combine. Cook for about 1 minute.
  4. Slowly whisk in the chicken broth, milk, and heavy cream, ensuring no lumps form.
  5. Bring the mixture to a gentle simmer, stirring occasionally until thickened.
  6. Add the cooked chicken, spinach, and gnocchi. Cook until the gnocchi is tender, about 3-5 minutes.
