Chicken Wild Rice Soup

A comforting one-pot meal featuring tender chicken, earthy wild rice, and flavorful vegetables simmered in a creamy broth.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup wild rice, cooked
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Melt butter in a large pot over medium heat until bubbly.
  2. Sauté the diced onion, carrots, and celery for about 5 minutes.
  3. Add the garlic powder, cooked chicken, and cooked wild rice, mixing everything well.
  4. Pour in the chicken broth and bring to a gentle simmer.
  5. Reduce heat and add the heavy cream, stirring until well combined.
  6. Season with salt and pepper to taste, adjusting as needed.
  7. Allow the soup to simmer for an additional 10 minutes.
  8. Garnish with fresh parsley before serving.

Notes

Use leftovers or store-bought rotisserie chicken for convenience. For a thicker soup, reduce the amount of broth.
