Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 box of stuffing mix (seasoned)
  • 2 cups chicken broth
  • 1 can cream of chicken soup
  • 1 cup mixed vegetables (frozen or fresh)
  • Salt and pepper to taste
  • Gravy (optional, for serving)
  • Mashed potatoes (optional, for serving)

Instructions

  1. Prepare the chicken by placing the chicken breasts at the bottom of the Crock Pot.
  2. Mix the stuffing mix, chicken broth, cream of chicken soup, and mixed vegetables in a bowl.
  3. Layer the mixture over the chicken in the Crock Pot, ensuring the chicken is covered.
  4. Season with salt and pepper to taste.
  5. Set the Crock Pot to low for 6-8 hours or high for 3-4 hours.
  6. Serve the meal once the chicken is tender, optionally with gravy and mashed potatoes.

Notes

Check for doneness by ensuring the internal temperature of the chicken reaches at least 165°F. You can also add herbs for extra flavor.
