Instant Pot General Tso’s Chicken

A delightful twist on a classic Chinese-American dish, this Instant Pot General Tso’s Chicken is quick, easy, and packed with savory flavor.

Ingredients

  • 1 1/2 pounds boneless and skinless chicken thighs
  • 3 large eggs (beaten)
  • 1 cup all-purpose flour
  • 1 cup cornmeal
  • 1/4 cup vegetable oil
  • 1/3 cup water
  • 6 tablespoons rice vinegar
  • 6 tablespoons soy sauce
  • 6 teaspoons hoisin sauce
  • 3 tablespoons brown sugar
  • 1 tablespoon minced ginger
  • 1 tablespoon minced garlic
  • 1/2 teaspoon red chili flakes
  • 2 tablespoons cornstarch
  • 3 tablespoons water (for slurry)

Instructions

  1. Prep the baking sheet: Line a baking sheet with parchment paper and set it aside.
  2. Prep the chicken: Pat the chicken dry and cut it into 2-inch chunks.
  3. Set up breading station: Set out two small bowls. In the first bowl, add the beaten eggs. In the second bowl, combine the all-purpose flour and cornmeal.
  4. Bread the chicken: Dredge each piece of chicken in the egg first, then coat it in the flour mixture. Place the coated chicken on the prepared baking sheet.
  5. Saute the chicken: Press the sauté button on the Instant Pot and wait until it reads ‘HOT.’ Pour in the vegetable oil, then add the coated chicken. Sauté for about 5 minutes until golden brown, turning to ensure even cooking.
  6. Add the sauce ingredients: Pour in the water, rice vinegar, soy sauce, hoisin sauce, brown sugar, minced ginger, minced garlic, and red chili flakes. Stir well and scrape any bits of chicken stuck to the pot.
  7. Pressure cook: Close the lid and set the pressure release valve to sealing. Press the manual or pressure cook button and set it to high pressure for 5 minutes. Allow the pressure to naturally release for 10 minutes, then release any remaining pressure.
  8. Thicken the sauce: Open the lid and stir. Press the sauté button again to bring the sauce to a simmer. Mix the cornstarch slurry (water and cornstarch) into the pot and let it simmer for about 5 minutes, until thickened. Turn off the Instant Pot and let it sit for 5 minutes, allowing the sauce to further thicken as it cools.

Notes

Use chicken thighs for their tender texture, but you can substitute chicken breasts if preferred. Cornmeal adds a nice crunch to the batter.
