  • 4 Chicken Thighs (cut in half)
  • 1/3 cup All-Purpose Flour
  • 2 cups Corn Flakes (lightly crushed)
  • 2 Eggs
  • 1/4 cup Sour Cream
  • 2 tsp Hot Sauce (I used Franks Red Hot)
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper
  • 1 cup Iceberg Lettuce (shredded)
  • Dill Pickle Slices (about 2 per slider)
  • 1/2 cup Mayonnaise
  • 1 tbsp Sriracha

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Mix the mayonnaise and Sriracha together for the aioli, refrigerate.
  3. Line a baking sheet with parchment paper.
  4. Whisk the eggs, sour cream, hot sauce, salt, and pepper until smooth.
  5. Sprinkle the chicken thighs generously with flour, then dip into the egg mixture and coat with cornflakes.
  6. Transfer the coated chicken onto the baking sheet.
  7. Bake the chicken for 15 minutes, flip, and bake for another 15 minutes.
  8. Toast the cut sides of the Hawaiian rolls until golden brown.
  9. Spread Sriracha aioli on both sides of the rolls, assemble with lettuce, fried chicken, and dill pickles.

Notes

Use panko breadcrumbs for similar crunch if desired. Adjust hot sauce to your spice tolerance.
