Dump and Start Instant Pot Chicken Fajitas

A quick and easy recipe for flavorful chicken fajitas made in the Instant Pot, perfect for busy weeknight dinners.

Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 bell pepper, sliced (any color works)
  • 1 onion, sliced
  • 1 packet fajita seasoning
  • 1 can diced tomatoes with green chilies (14.5 oz)
  • Salt and pepper to taste
  • Tortillas
  • Optional toppings: avocado, sour cream, cheese, cilantro

Instructions

  1. Add the chicken breasts in the Instant Pot.
  2. Add the sliced bell pepper, onion, fajita seasoning, and diced tomatoes to the pot.
  3. Stir everything together to evenly coat the chicken and vegetables with the seasoning.
  4. Close the lid of the Instant Pot and ensure the valve is set to sealing.
  5. Set the pot to cook on high pressure for 10 minutes.
  6. Once the cooking time is complete, allow for a natural release for 5 minutes, and then perform a quick release for any remaining pressure.
  7. Open the lid and use two forks to shred the chicken in the pot. Mix well with the vegetables to combine.
  8. Spoon the chicken and vegetable mixture into tortillas and add your choice of toppings.

Notes

The fajita seasoning provides a flavorful kick; feel free to use homemade seasoning as a healthier alternative. You can substitute chicken thighs for chicken breasts if you prefer a richer flavor.
