Creamy Ranch Chicken in the Instant Pot

A delightful and simple recipe that delivers maximum flavor with minimal effort, perfect for busy weeknights.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 packet ranch dressing mix
  • 1 cup chicken broth
  • 1 cup cream cheese
  • 1 cup shredded cheddar cheese
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Place the chicken breasts in the Instant Pot, ensuring they are laid flat for even cooking.
  2. Sprinkle the ranch dressing mix evenly over the chicken, ensuring all pieces are coated.
  3. Pour the chicken broth over the chicken, making sure not to wash off the ranch seasoning.
  4. Secure the Instant Pot lid and select the high-pressure cooking setting. Set the timer for 10 minutes.
  5. Allow the pressure to release naturally for 5 minutes once the cooking time is up. Then, perform a quick release for any remaining pressure.
  6. Carefully remove the chicken breasts from the pot and set them aside on a plate.
  7. Stir in the cream cheese, garlic powder, and onion powder into the remaining liquid in the pot until the mixture is smooth and creamy.
  8. Return the chicken to the pot, coating it thoroughly in the creamy sauce.
  9. Stir in the shredded cheddar cheese, mixing until it is fully melted and incorporated.
  10. Taste your creamy ranch chicken and add salt and pepper as needed. Garnish with fresh parsley before serving.

Notes

The ranch dressing mix adds a fantastic flavor; substitute cream cheese with Greek yogurt for a lighter version. Use low-sodium chicken broth to control saltiness.
