Keto BBQ Chicken Casserole

A hearty casserole of shredded chicken, BBQ sauce, and a creamy cheese blend, perfect for comfort food lovers on a keto diet.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup BBQ sauce (sugar-free recommended)
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup cooked bacon, crumbled
  • 1/2 cup cream cheese, softened
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the shredded chicken, BBQ sauce, cream cheese, green onions, and half of the shredded cheese in a large mixing bowl until well combined.
  3. Transfer the mixture into a greased baking dish, spreading it out evenly.
  4. Add the crumbled bacon on top, followed by the remaining shredded cheese.
  5. Bake for 25-30 minutes, or until the cheese is bubbly and golden.
  6. Cool slightly before serving to ensure flavors meld beautifully.

Notes

You can use store-bought rotisserie chicken to save time. Select a sugar-free BBQ sauce for a low-carb dish. Mixing cheddar and mozzarella can enhance flavor; feel free to use any cheese on hand.
