Lemon Herb Chicken Thighs

Ingredients

  • 4 chicken thighs (bone-in or boneless)
  • 1/4 cup olive oil
  • Juice of 2 lemons
  • 2 tablespoons fresh herbs (such as oregano or thyme)
  • 2 garlic cloves, minced
  • Salt and pepper to taste

Instructions

  1. Whisk together olive oil, lemon juice, fresh herbs, minced garlic, salt, and pepper in a medium bowl to make the marinade.
  2. Add the chicken thighs to the marinade, ensuring they are evenly coated. Cover and let it marinate for at least 30 minutes in the refrigerator.
  3. Preheat your oven to 400°F (200°C) while the chicken is marinating.
  4. Grease a baking dish lightly or line it with foil, then place the marinated chicken thighs in the dish in a single layer.
  5. Bake for 25-30 minutes, or until the chicken is golden brown and reaches an internal temperature of 165°F (75°C).
  6. Remove from the oven and let the chicken rest for a few minutes before serving.

Notes

For best flavor, marinate for up to 2 hours. Use a meat thermometer to ensure chicken is cooked perfectly.
