Loaded Chicken and Potato Casserole

A comforting and satisfying casserole combining shredded chicken, hearty potatoes, and topped with crispy bacon and melted cheese.

Ingredients

  • 2 cups cooked chicken, shredded
  • 4 cups potatoes, diced
  • 1 cup sour cream
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup cooked bacon, crumbled
  • 1 cup green onions, chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Mix the shredded chicken, diced potatoes, sour cream, milk, garlic powder, onion powder, salt, and pepper in a large bowl until well incorporated.
  3. Transfer the mixture into a greased baking dish, spreading it out evenly.
  4. Add toppings of shredded cheese, crumbled bacon, and chopped green onions.
  5. Bake covered with foil for 30 minutes.
  6. Bake uncovered for an additional 15-20 minutes until golden brown and bubbly.
  7. Cool for a few minutes before serving.

Notes

Rotisserie chicken is a great option for quick preparation. Feel free to substitute the cheese based on your preference.
