Cheesy Mexican Chicken Spaghetti

A comforting and flavorful dish combining tender chicken, zesty salsa, and creamy cheese, perfect for busy families and casual gatherings.

Ingredients

  • 8 oz spaghetti
  • 2 cups cooked chicken, shredded
  • 1 cup salsa
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1 cup corn (optional)
  • 1 cup black beans (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the spaghetti according to package instructions, then drain and set aside.
  3. Mix the shredded chicken, salsa, sour cream, chili powder, garlic powder, and any optional corn or black beans in a large bowl.
  4. Combine the cooked spaghetti with the chicken mixture until well coated.
  5. Transfer the mixture to a greased casserole dish, spreading it out evenly.
  6. Top with the shredded cheddar cheese.
  7. Bake for 20–25 minutes, until the cheese is melted and bubbly.
  8. Serve and enjoy hot.
