Slow Cooker Brown Sugar Balsamic Chicken

A delightful dish with a sweet and tangy glaze over tender chicken, perfect for busy weeknights or cozy family dinners.

Ingredients

  • 1.5 lbs boneless, skinless chicken breast
  • 1/2 cup water
  • Salt and black pepper to taste
  • 1/2 tsp allspice
  • 1/4 tsp garlic powder (or 2 cloves of minced garlic)
  • 1/4 cup brown sugar
  • 1/4 cup balsamic vinegar
  • 1 tbsp corn starch
  • 2 tbsp soy sauce
  • 1/2 cup water

Instructions

  1. Prepare the chicken: Place the boneless, skinless chicken breasts in the slow cooker. Pour in 1/2 cup of water. Season with salt, black pepper, allspice, and garlic powder.
  2. Start slow cooking: Set the slow cooker to high and cook for 3 hours.
  3. Drain and keep juices: After 3 hours, carefully remove excess liquid from the slow cooker using a strainer, but retain the juices.
  4. Make the glaze: In a small saucepan over medium-high heat, combine brown sugar, balsamic vinegar, corn starch, soy sauce, and 1/2 cup of water. Stir constantly until thickened, about 4 minutes.
  5. Glaze the chicken: Pour the thickened glaze over the chicken in the slow cooker.
  6. Final cooking phase: Cook for an additional hour on high.
  7. Serve: Once cooked, shred or slice the chicken and serve with the glaze drizzled on top.

Notes

For best flavor, consider marinating the chicken overnight. Avoid using frozen chicken for cooking on high to ensure even cooking.
