Sweet Hawaiian Crockpot Chicken

A delightful dish combining the tropical flavors of pineapple with tender chicken, perfect for busy weeknights or casual family gatherings.

Ingredients

  • 4 boneless, skinless chicken thighs
  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1/2 teaspoon black pepper
  • 1/2 cup chopped green onions (for garnish)
  • 1 cup pineapple chunks (optional for garnish)

Instructions

  1. Mix the Sauce: In a medium bowl, combine pineapple juice, soy sauce, brown sugar, minced garlic, minced ginger, and black pepper. Stir until the sugar dissolves.
  2. Prepare the Chicken: Place the chicken thighs in your slow cooker in a single layer.
  3. Add the Sauce: Pour the prepared sauce over the chicken, ensuring it’s evenly coated.
  4. Add Pineapple Chunks: Scatter the pineapple chunks over the top for an extra burst of flavor.
  5. Cook: Cover and cook on low for 360-480 minutes, or until the chicken is cooked through and tender.
  6. Serve: Once done, shred the chicken slightly if desired, serve hot, and garnish with chopped green onions.

Notes

Adjust sweetness by adding more brown sugar if desired. For added flavor, consider searing the chicken thighs before slow cooking.
